Summer is Served
Summer has officially arrived on our plates here at Housel Bay. This new, bright, fresh season ‘brings with it a host of new ingredients for our chefs to play with.’ Some of our Head Chef, Joe’s, favourites are ‘asparagus, broad beans and strawberries.’
‘The brighter days and luscious sunshine are something that we try to reflect in our dishes. We are currently working on a fantastic dish which combines asparagus, smoked bacon and broad beans with Gloucester Old Spot pork loin from Primrose Herd.’
But it’s not just what grows in the fields that changes with the season, but also our local seafood. Lobster is in abundance during the summer season, and our local fishermen over in Cadgwith supply us the best of Cornish quality. We’re using it in our delicious lobster rolls, new to The Terrace menu, the perfect post coastal walk dish.
We love showcasing the best of British summer produce, and strawberries are by far Joe’s favourite part of summer.
‘We are serving these with a clotted cream which we bake with lemon and serve with a little basil syrup. Somewhat of a play on an Eton Mess.’
