‘The Last Of The Summer Shine’ | Fallowfields
Wednesday 20th September welcomed a brand new Tasting Menu in Fallowfields, introducing ‘The Last of The Summer Sunshine.’ ‘This is the last chance to indulge in the spoils of summer before the days draw in and the nights encapsulate us all.’ - Joseph Fallowfield.
What can we expect in this menu?
During the end of the summer months ‘nature has feasted on an excess of sunlight, warmth and a perfect Cornish climate. Fruit is now at the pinnacle of its flavour, after a summer of sweetening, almost bursting from inside.’ You can taste this in our desserts such as the sharpness of raspberry, matched with white chocolate and bitter pistachio. To juicy apricots, with vanilla, moscato and rice pudding.
Can we begin to taste the ingredients of autumn?
In some courses, autumn is slowly beginning to make its presence known, with ‘the first of the early root vegetables’ appearing, such as Heritage beetroot, which is paired with a cooling horseradish ice cream, crunchy croutons and topped with dill. Picked by our local picker, Joe Pickles at Wollow and Route.
Also autumnal woodland game appears on the menu, with fallow deer, served with chicory, preserved fig , walnut and chocolate with truffle…
