New Menu in Fallowfields | ‘Dawn of Warmth’

  1. What is the ‘Dawn of Warmth’ about?

    The first harvests of spring marks the first of the bountiful produce chefs get to use, thanks to the anticipated arrival of warmth.‘Suddenly the world seems to explode into life around us’.’

    For the first time of the year, all the ingredients which were lovingly sown back in winter are finally ready to be picked, and ‘we are comforted by the knowledge that this is just the beginning.’ - Joseph Fallowfield, Head Chef.

  2. What can we expect with this new menu?

    ‘Follow the tide and listen to the wild as the sea air tempers our existence into pure bliss.’ - Joseph Fallowfield , Head Chef.

    This menu really is a celebration of produce this time of year. As this menu guides your taste buds on a journey of classic spring flavours. From foraged wild garlic with handmade ravioli, to fresh cod caught by our fisherman Tonks, with English asparagus, girolles, broad beans, and jersey royals. And Gloucestershire old spot pork seasoned with garden herbs, picked by Doug our gardener.

  3. What dish stands out the most?

    ‘Wild flowers burst into colour.’ - Joseph Fallowfield, Head Chef.

    There is something so delicate about balancing the flavours on a dessert, and our elderflower and lemon brûlée does this perfectly. Served with delicious strawberry and meringue; classic English flavours, married with a French classic. It is creamy but light, rich but refreshing. Capturing that feeling of fresh spring…With Elderflower being in its prime this time of year, you can find it growing along the wild hedgerows. Identified by its iconic pure white flowers, and of course its sweet smell.

    We like to make the most of this delicious, sweet flower, and so you will also discover it in our ‘Spring Cup’ cocktail. Made with Cotswold’s gin, homemade thyme and elderflower syrup, fresh lemon, and topped with soda. Available in our Marconi’s bar.
