Spring Menus
Colour has burst along the coastline; bright yellow from gorse which has flowered, a sea of green from the fields, and glittering turquoise water. We have also welcomed this burst of colour in our kitchen, with the arrival of our spring produce.
Seasonal produce.
We value celebrating seasonal ingredients here at Housel Bay. Not only does eating with the seasons support environmental sustainability, but you really can taste the difference in quality by eating local, in season produce. We are lucky here at the Lizard to have a plethora of stunning produce, from the sea and the fields.Take a read of some of our favourite spring produce, which have inspired some of our new dishes…
Wild Garlic.
Spring is the time to forage for this absolutely delicious plant. With its pungent smell it is hard to miss as you stroll through forests and woodlands at this time of year. This spring we have picked the leaves and made up some tasty wild garlic mayo, to accompany our new “Housel Bay Salty Sea Dog”, which is crispy ling fillet, served with cucumber, pickles, in a delicious brioche roll - available on our Terrace menu.
Lamb.
A seasonal treat! We source our lamb from Tregullas Farm just next door to us, where they are fed fresh spring grass. Giving a sweet, tender and delicious taste. You can expect to see Tregullas lamb on our Fallowfields menu this season, which we serve with mint, white onion puree and Savoy cabbage. You can also try our spring lamb with our new Cornish flatbread sandwich at The Terrace. We slow roast with chilli, capers, salsa verde and serve with a raisin chutney, celeriac slaw and rocket.
Spring Greens.
Spring greens are packed with flavour, and also contain lots of vitamins, so are not only delicious but very nutritious! We source all our veg fresh from our local farmer, Joe Pickles at Wallow & Root. His delicious produce has inspired one of our new dishes at Fallowfields; “Mr Pickle’s Garden”, which is an asparagus risotto served with roasted beetroot, pesto and local greens. Truly a taste of spring!
