Summer has arrived on our menus, and we’re loving the new tastes this vibrant season brings. From fresh, cooling crab on our red pepper and chilli gazpacho, to English sweet pea and rich ricotta ravioli. We had a chat with our Head Chef, Joseph Fallowfield, to get to know his thoughts behind the menu changes.

What does summer mean to you?

"For myself, summer is the season of nostalgia. My grandmother notoriously only bought produce that was grown in the UK. I could never understand her frustration with Spanish strawberries but now I find myself mirroring her contempt. Out of season strawberries can be watery, bland and without sweetness. Comparing this to a sweet, juicy, ripe Cornish strawberry seems almost inconceivable. Furthermore the treasured English strawberry has been so integral to our summer culture in England that we really wanted to create a dish which celebrated this.”

What key theme is in our summer menus?

“There is an unintentional recurring alcoholic cocktail theme for our desserts, and this is no different. We based the flavours on a classic Pimm’s cocktail…

Our re-invention of a classic Pimm’s incorporates; a tart, made from lime and cucumber, a strawberry & gin sorbet, macerated strawberries and a mint syrup. We have recently added a miniature doughnut, which we serve with a chilled puree of fresh ripe strawberries. I personally love the richness and tartness of the dish, which contrasts heavily with the heaps of sweet strawberry. I think that it is classic flavour profiles like this, which create dishes of which I am the most proud.”

Our Summer favourites

Sweet Cornish strawberries aren’t the only thing we’re loving on the menu. You can’t quite beat the freshness of a summer salad on a hot day. The Terrace offers delicious choices such as local heritage tomatoes mixed with olives, pesto and crunchy croutons in herb oil. Or our favourite Cornish kales mixed with rocket pesto, and pine nuts.

There’s something about seeing asparagus on the menu that reminds you of a good old English summer. This Fallowfields starter is the perfect combo, of an St.Ewe’s egg, paired with asparagus, peas, ham hock and topped with truffle. Match made in heaven?
