Tasting Winter
In conversation with Joseph Fallowfield, our Head Chef at Housel Bay, talks about the wonderful ingredients in season in Winter, and what inspires his dishes this time of year in our signature restaurant Fallowfields.
What do you love about Winter?
“Winter is the season of comfort at the hotel and we try to project this through into the restaurant. Personally I think that this time of year is when the great, traditional Sunday Lunch really excels. There’s simply nothing better than hiding from the torrential rain with great food, drink and company.”
What are some of your favourite dishes on the winter menu at Fallowfields?
“In terms of the menu we have some specific dishes which scream winter such as our baked Alaska, with orange curd. There is also a noticeable cheeky addition of booze running through many dishes. Something to warm your cockles after a long day out on your feet.”
Does our location inspire you?
“We are lucky that being surrounded by the coast, we have a constant supply of seafood so even during the depths of Winter we still have the freshest and most beautiful ingredients to choose from.”
